Roasted Garlic and Herb Burgers Goat Cheese and Caramelized Red Onion

This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.

Ingredients

1 lb ground round
1 lb ground sirloin
1 large bulb garlic
1/4 cup Italian Flat Leaf Parsley, washed, dried and roughly chopped
2 Tbsp chives, finely chopped
1 medium red onion, thinly sliced
1/4 cup extra virgin olive oil
1/2 tsp salt
1/2 tsp freshly ground black pepper
1 large log plain goat cheese (6oz)
6 Chiabatta rolls (or favorite roll)

 

Instructions

Pre-heat oven to 375 degrees. Take bulb of garlic and remove any loose skin. Cut entire top off bulb and place in center of a 12 inch by 12 inch square of aluminum foil. Drizzle with 1-2 Tbsp olive oil and sprinkle with salt and pepper. Bring edges of foil up over the top of garlic and scrunch down to form a packet. place packet on baking sheet and place in preheated oven. Roast garlic for 1-1 1/2 hours. Place 2 Tbsp olive oil in medium saute pan and heat on medium for 2 min. Add red onion and reduce heat to low, stirring occasionally until onions are soft, translucent and slightly brown, approx. 10 min. Turn off heat and set aside. In a large mixing bowl combine ground round, ground sirloin, parsley, chives, salt and pepper. When garlic has finished roasting and is cool enough to handle, unwrap packet and remove garlic. Over mixing bowl squeeze the soft roasted garlic out of bulb into meat mixture. Using your hands mix to combine ingredients into a homogenious mixture. Form mixture into 6 equal sized patties, should be approx 5 inches in diameter and 1/2 inch thick. Place patties on a wax paper lined platter and place in refrigerator for atleast 1 hour. When using a charcoal grill light coals and let burn for atleast 30 min or until completely white. For gas grills turn on high and preheat for 10 min. Just prior to grilling brush grill grate with oil or spray with grilling spray. Place patties on grill and reduce heat to medium. Grill on each side for approx. 4 min for medium burgers. During last minute of cooking slice goat cheese and spread equal portions on top of each burger. Remove burgers to platter and set aside. Slice chiabatta rolls in half and brush cut sides with remaining olive oil and place cut side down on grill for 1-2 min until toasted with nice grill marks. Reheat onions in saute pan for 2 min over medium heat. Place burger patty on each roll and top with 1-2 Tbsp onion mixture. Serve immediately!
