Reverse Cordon

A traditional meal turned into a burger.


1 lb. ground ham
1 lb. ground pork
1/2 cup bread cubes
2 eggs
1/4 cup packed brown sugar
2 T. chopped green pepper
1 T. chopped onion
1 tsp. dry mustard
6 slices chicken loaf luncheon meat
12 slices fontina cheese
honey mustard
sliced red onion
boston lettuce
kaiser rolls


Combine ground pork and ham. Add bread cubes, eggs, brown sugar, green pepper, onion, and mustard. Mix well. On square of waxed paper press meat mixture into a 12x12 square. Arrange 6 slices of fontina on 1/2 square, then chicken loaf on top of cheese, then another slice of cheese. Fold other half of meat mixture atop layered half. Using sharp knife, cute into 6 squares. Slightly press sides together. Grill for 12-15 minutes. Place on kaiser rolls and top with mustard, onion and lettuce.
