Red, White and Bleu Burger

The inspiration for this burger came from my brother in law who is a US Marine currently in Iraq. I wanted to create a hardy burger packed with all American ingredients that satisfys, but doesn't overwhelm you with toppings. I have served these burgers at some of America's favorite summer holidays including Memorial Day, Fourth of July, and Labor Day. When my brother in law returns from Iraq, I plan on making this the center piece of his patriotic inspired welcome home meal.


1/4 cup red onion, small dice
1/4 cup roma tomato small dice
1 tblsp extra virgin olive oil
1 pinch kosher salt
2 pounds of Ground Chuck
1.5 oz Worcestershire Sauce
2 egg whites
1 tblsp season salt
3/4 cup Seasoned bread crumbs
1/2 cup vegetable oil (to grease grill)
12 slices bacon
6 slices bleu cheese
2 large red onion rings thin sliced (approx 1/16 inch)
6 pieces bibb lettuce
6 tblsp Ultimate Blue cheese dressing
1/2 cup italian dressing
6 sesame seed buns


Pre-heat gas grill to 400 degrees. Dice ¼ cup of red onion and ¼ cup of Roma tomato into small dice. Place small sauté pan onto grill, adding 1 tblsp extra virgin olive oil, diced onion, tomato and pinch of kosher salt. Saute 5 minutes. After sauté complete, in a large bowl add onion and tomato mixture to 2 pounds ground chuck, 1 ½ oz worcestershire sauce, 2 egg whites, 1 tblsp season salt, ¾ cup seasoned bread crumbs. Mix thoroughly with clean hands. Place medium frying pan on grill and add bacon, cooking approximately 10-12 minutes until crisp. Remove pan from grill and place bacon on paper towel covered plate to drain. Mold ground chuck into 6 1/3 pound patties. Dip large dish towel into vegetable oil and grease grill grates. Place burger patties on grill grates and grill 6 minutes on first side, rotating one half turn at around 3 minutes. Turn burgers over, add bleu cheese slices to burgers, grill another 5 minutes, rotating one half turn after 3 minutes. While burgers cooking on grill, slice 6 slices of red onion approx 1/16 of an inch thick, using only the 2 largest outer rings of the onion from each slice. Remove burgers and set aside approx 3 minutes to rest. Using a basting brush, paint top and bottom of sesame seed buns with Italian dressing, place on grill for 1-2 minutes or until grill marks appear. Remove buns from grill placing bottom of bun on a plate. Apply ½ tblsp of Ultimate Blue Cheese dressing to bottom portion of bun, spreading evenly. Place burger pattie on bun, followed by 2 slices of bacon, 2 large red onion rings, 1 piece of bib lettuce. Apply ½ tblsp blue cheese dressing to top portion of bun, spreading evenly. Add bun top to burger and cut in half. Repeat for remaining 5 burgers.
