Red, White, and BBQ Burger - Grilled Red Onion and Tomato (Red), Herbed Mayo Spread and Monterey Jack Cheese (White) and BBQ Sauce

A good 4th of July barbeque burger!


Herbed Mayo Spread
¾ cup mayonnaise
1 teaspoon finely chopped fresh thyme
1 teaspoon finely chopped fresh sage
1 teaspoon finely chopped flat leaf parsley
1 teaspoon finely chopped tarragon
1 teaspoon salt
Patties 1 ½ pounds hamburger meat
1 small red onion finely diced
½ cup barbeque sauce
2 teaspoons of salt cracked black pepper
6 large Kaiser rolls
2 large Beefstake tomatoes sliced into 6 thick rounds
1 medium sized red onion sliced into 6 rounds
12 slices Monterey Jack cheese
vegetable oil for brushing the grill


FOR THE HERB MAYO SPREAD: In a medium bowl, combine mayonnaise, thyme, sage, parsley, tarragon and salt. Mix until thoroughly combined. Chill if possible or set aside. FOR THE PATTIES: In a bowl, combine hamburger meat, minced onion, barbeque sauce, salt and cracked black pepper and blend. Shape mixture into six patties and set aside. FOR THE GRILLED TOMATO AND RED ONION: Prepare the grill by brushing it with vegetable oil. Season the tomato and onion rounds with salt and pepper and place directly on the grill. Grill on each side for about 2 minutes or until the onion begins to carmelize and the tomato to become smoked. Once done, remove them from the grill and place in foil so they stay warm. FOR GRILLING: Immediately after removing the tomato and red onion from the grill, brush the grill with more vegetable oil and begin grilling the patties. Place them on the rack and cover the grill. Cook burgers to desired doneness, turning them once, about 4-6 minutes on each side for medium-rare to medium. If desired, during the last few minutes of cooking, place the Kaiser rolls, cut side down, on the outer edges of the rack to toast lightly. Immediately after removing the burgers from the grill place 2 slices of Monterey Jack cheese on each burger. ASSEMBLING THE BUGER: Generously spread herb mayo spread on both sides of the roll. Then, on the bottom half of the roll, place cheese topped burger. Layer with a slice of grilled tomato and red onion. Combine the two halves.
