Quesadilla Burgers With Fire Roasted Tomatillo and Avacado Salsa

Ingredients

Oil to Brush on Grill Rack
Fire Roasted Tomatillo and Avocado Salsa
½ lb. tomatillos, husks removed
4 cloves of garlic, chopped, 3 cloves for salsa and 1 clove for burgers
4 jalapenos, finely chopped, 2 for salsa and 2 for burgers
2 medium red onions, 1 chopped for salsa and 1 thinly sliced for burger assembly
1 ripe Haas Avocado, chopped
2 limes, juiced
2 ½ teaspoons salt, 1 teaspoon for salsa and 1 ½ teaspoons for burgers
1 teaspoon freshly cracked pepper, ½ teaspoon for salsa and ½ teaspoon for burgers
1/2 cup chopped cilantro, ¼ cup for salsa and ¼ cup for burgers Burger Patties
1 3/4 pounds ground chuck
2 Tablespoons Sutter Home Chenin Blanc
1 pint sour cream
Vegetable Oil to brush on tortillas
6 – 6”flour tortillas
2 lbs. shredded queso blanco cheese
1 head romaine lettuce, shredded

 

Instructions

Directions Preheat a gas grill to medium-high. Brush grill rack with oil to prevent food from sticking. Place tomatillos on grill and turn occasionally until brown and soft. Take tomatillos off grill, chop and place in a medium sized bowl. Add 3 cloves chopped garlic, 2 chopped jalapenos, 1 chopped onion, avocado, lime juice, salt, pepper and cilantro. Mash with a potato masher until well mixed, but still chunky. Place salsa in refrigerator. To make burger patties, combine the reserved 1 clove chopped garlic, 2 chopped jalapenos, 1 ½ teaspoons salt, ½ teaspoon pepper, ¼ cup cilantro, ground chuck, and chenin blanc. Handling the meat as little as possible so as not to compact it, mix well. Form into 6 patties of equal size. Place patties on grill rack. Cook for 3-4 minutes. Flip patties and cook 3-4 minutes longer for medium rare or until cooked to preferred doneness. Remove patties from grill. Scoop sour cream into a condiment squirt bottle. Lightly brush vegetable oil on tortillas and place 6 tortillas on grill oiled side down. Sprinkle cheese generously over all 6 tortillas. When cheese has melted (this only takes a minute or so), take tortillas off of the grill. Now place the other 6 tortillas on the grill and repeat the process. To assemble burgers, place a tortilla on assembly surface. Apply a generous amount of fire roasted tomatillo and avocado salsa over the cheese, followed by a burger. Then, layer an onion and shredded lettuce. Squirt some sour cream over the lettuce and close sandwich with other tortilla. Let assembled burgers sit for about 5 minutes to set the cheese like “glue” to other ingredients for a less messy burger. Slice in half and serve. Makes 6 servings.
