Portuguese beef and chirico burger
Rhode Island, where i grew up, has a large Italian and Portuguese community, and the flavors in their cooking have influenced the cuisine in the state. This burger represents some of the flavors that make Rhode Island different than the rest of New England. Diversity of flavor and diversity of community make this a great local American burger.
2 pounds ground beef
1/2 pound chirico sausage, removed from casing
one sweet onion
one red pepper
3 tablespoons olive oil
salt and pepper to taste
6 Portuguese sweet rolls
Combine beef and chirico and then form into 6 patties. Slice the onion and the pepper into medium sized slices, place in aluminum foil packet with oil, salt and pepper.
Light the grill and warm to a medium heat. Place the veggie packet on the top grate of the grill. let cook for approximately 20 minutes until the onions are translucent and the mix has started to caramelize. 10 minutes into this cooking, place the burgers on the grill. After 6-7 minutes, flip to the other side. Continue to cook for another 5 minutes.
Remove the burger from the heat, place on the sliced Portuguese sweet roll. Top the burger with several tablespoons of onions and peppers
This burger reminds me of the sausage and peppers and chirico sandwiches I used to eat growing up in Rhode Island. The sweetness of the roll and the onion mixture match nicely to the spiciness of the sausage.
