PEPPER JACK FIESTA BURGERS

Ingredients

2 lbs ground sirloin
6 tbsp taco seasoning
1 c. tortilla chips crushed
1/4 c. onion chopped
1/2 c. crushed tomatoes and green chilies
2 tsp Kosher salt
Dash of pepper
Vegetable oil for brushing on grill
6 hamburger buns
6 slices of pepper jack cheese
6 tomato slices, thinly sliced
2 c. shredded lettuce
6 tsp hot sauce mild

 

Instructions

Preheat a gas grill to medium-high heat. To make the patties, combine the ground sirloin, taco seasoning, tortilla chips, onion, rotel, salt and pepper in a large bowl. Shape into six patties. When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the grill rack, cover and cook turning once until done to preference, 5 to 7 minutes on each side for medium doneness. During the last few minutes of cooking time, place the buns cut side down on outer edges of grill rack to toast lightly. During the last few minutes of cooking the patties, top each patty with a slice of pepper jack cheese. To assemble the burgers, place a patty on bun bottom, top with tomato slice, shredded lettuce and 1 tsp of Hot Sauce. Add the bun tops and serve. Makes 6 burgers.
