Pearl’s Glazed Vidalia Burger with Cheddar crusted Italian bread

Ingredients

FOR THE COOK
Pour 1 glass of Sutter Home Pinot Noir to sip while cooking
FOR THE GLAZE
1 c strawberry preserves
1 c. Karo light syrup
1 T brown Sugar
1/2 c. Soy Sauce
1 t. ginger, ground
2 garlic cloves, chopped
1 T cornstarch
1 large Vidalia Onion (sliced to be used in final assemble of burger)
FOR THE CHEDDAR CRUSTED ITALIAN BREAD
12 slices of Italian Bread, 1/2
1/2 c. butter, softened
12 t. sharp cheddar cheese, finely shredded
6 t. parsley, chopped
FOR THE PATTIES
3/4 pound ground sirloin
3/4 pound ground chuck
1 t sea salt
1/2 t. fresh ground black pepper
2 T fresh parsley, chopped
2 t. Worcestershire sauce
1/4 c. olive oil, for brushing on the grill (recommended: Colavita)

 

Instructions

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high heat. Place a large round pizza stone on grill

FOR THE GLAZE
Combine the strawberry preserves, Karo light syrup, brown sugar, soy sauce, ginger, garlic, cornstarch & onion in a 3-quart fire-proof saucepan. Bring the mixture to a boil and let simmer for 15 to 25 minutes till thickened. Transfer the sauce to a bowl, remove onions and place in a separate bowl. Cover both bowls and set aside

FOR THE CHEDDAR CRUSTED ITALIAN BREAD
With a 4″ round cookie cutter, cut out center of each slice of bread. Discarding the crust & save for bird food. Spread the bread with butter & sprinkle each slice with cheddar cheese & parsley. With your hand, lightly press cheddar cheese & parsley into butter. On the opposite side of the bread, spread just butter. Place on the pizza stone, cheese side down & grill till golden brown. Flip & repeat with opposite side. Lay out on a cookie sheet &oosely cover with foil till ready to assemble.

FOR THE PATTIES
In a bowl, combine ground sirloin, ground chuck, sea salt, black pepper, parsley, Worcestershire sauce. Divide the mixture into 6 equal portions & form 6 patties. Brush the grill with oil & place the patties on the rack. Grill patties for 3 to 5 minutes. Turn the patties over, cover & grill for another 3 to 5 minutes.

TO ASSEMBLE BURGERS
Place the burger on the bread, cheese side in, & top with the sliced Vidalia Onions you set aside. Top with the 2nd slice of bread, cheese side in. Enjoy
