Parma-Blue Beef Burgers on Garlic Crostini

Ingredients

BURGERS
2 pounds ground round
3 cloves garlic, minced
1 small white onion, chopped
1/2 cup fresh parsley, chopped
1/4 pound mushrooms, chopped
1/2 cup Cabernet Sauvignon
1 1/2 teaspoons salt
BURGER TOPPING
1/3 cup mayonnaise
1 garlic clove, minced
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
3/4 cup grated parmesan cheese
1/2 cup finely crumbled Blue cheese
bit of oil to brush on grill
12 slices french baguette, about 3/4 inch thick
1/3 cup olive oil
2 cloves garlic, halved

 

Instructions

Combine ground round, 3 cloves garlic,onion, parsley, mushrooms, wine and salt in a large bowl, mixing lightly but thoroughly. Shape into 6 1 inch-thick patties, shaping to fit the bread slices. For topping: Combine mayonnaise, 1 garlic clove, black pepper, cayenne pepper, parmesan cheese, blue cheese in a small bowl. Set aside. Place patties on gas grill over medium(350 degree) heat. Grill with lid closed for 10-11 minutes until only slightly pink in the middle, turning once. Meanwhile, brush both sides of bread slices with oil. Place bread around the outer edge of grill grid. Grill 1 minute per side, turning once. Remove bread slices from grill. Top burgers with cheese mixture in last minute or two of grilling, close lid and let the cheese melt. Rub bread slices with halved garlic cloves. Top 6 bread slices with burgers. Cover burgers with remaining bread slices and serve. Serves 6.
