Papeete Tahiti Burger


Papeete Spice Seasoning:
2 T Smoked Spanish Paprika, sweet
1/4 cup ground chipolte chile pepper spice
1 T ground cumin
1/4 tsp ground cayenne pepper
1/4 cup Brown sugar
1 T garlic salt
1 T kosher salt
Tahiti Relish:
2 cups fresh mango, diced
1 1/2 cups seedless cucumber, diced
1 shallot, chopped
2 T fresh lime juice
2 T Colavita Extra Virgin Olive Oil
1/8 tsp kosher salt, or to taste
1/8 tsp freshly ground black pepper, or to taste
2lbs ground chuck
1/4 cup Sutter Home Zinfandel
Colavita Extra Virgin Olive Oil, fro brishing the grill rack
6 slices of Monterey Jack cheese
6 Country Potato buns, split
1 cup mayonnaise


Preheat your gas grill to high.
To make the Papeete spice: mix in a small bowl the paprika, chipotle chili pepper, cumin, cayenne pepper, brown sugar, garlic salt and kosher salt. Mix well together until the ingrediants are incorporated and there are no lumps. Set the Papeete spice mix to the side.
To make the Tahiti Relish: use a vegetable peeler to remove skin from mango, then using a pairing knife to cut the flesh away from the pit ans dice. Coombine the mango, diced cucumber, shallot, lime juice, olive oil, kosher salt, and freshly ground pepper together. Set aside.
To prepare the patties: combine the chuck and wine in a large bowl. Mix together using your hands. Divide into 6 equal parts and form into patties.
Brush the grill rack with olive oil. Place the patties on the grill, season abundantly the top part of the patties with thte Papeete spice mix, cover and cook for 5 minutes. Turn the patties, season the turned portion with the Papeete spice mix, cover and continue cooking for another 5 minutes. Place the cheese slice on the patties during the last 3 minutes of grilling. Place the buns, cut side down , on the outer edges of the rack to toast lightly during the last 2 minutes of grilling.
To assemble the burger: slather the top and bottom buns with mayonnaise. Place the patties on the bottome bun add 4 to 5 tablespoons of the Tahiti Relish in the top of each patty. Add the top and serve.
Makes 6 burgers.
