Old Dominion Benedict Burgers

Ingredients

1 ½ pounds ground chuck
¼ pound ground ham sausage or ground ham
3 tablespoons Sutter Home Cabernet Sauvignon
3 tablespoons shredded jalapeno jack cheese plus 12 cheese slices for assembly of burger later
1 teaspoon salt
1 ½ tablespoons Steak grill seasoning
3 tablespoon butter, melted, 1 tablespoon for sauce and the rest for buttering the for English muffins later before grilling
3/4 cup mayonnaise
1 tablespoon lemon juice
1 ½ teaspoons Grey Poupon mustard
1 package of  Country Ham ham chips
Grill spray for grill
Butter spray for egg poacher
6 English muffins
6 eggs

 

Instructions

Patties: Mix together the gound chuck, ham/ham sausage, cabernet sauvignon, cheese, salt and grill seasoning. Divide into 6 patties. Set aside until time to grill. Set aside cheese slices for burger assembly. Mock Hollandaise sauce: Melt butter. Whisk 1 tablespoon of the butter with mayonnaise, lemon juice and mayonnaise. Set aside until time to heat for burger. Set aside additional butter for buns (English muffins) later. Lightly grill country ham pieces, chop or process into smaller pieces and set aside for assembly of burger later. Grill hamburger patties. While patties are cooking, warm sauce on the grill and heat water in pan for poached eggs. Grill patties to medium rare and remove from grill and set aside. When water is boiling for eggs, spray butter spray on poacher, break eggs into poacher and cover. Spread melted butter on English muffins and place English muffins on the grill. Remove when lightly browned. When eggs are done, remove eggs and sauce from heat and assemble burger. To assemble burger, add slices of jalapeno cheese on the bottom of the English muffin. Add pieces of country ham. Place burger on top of ham. Top burger with poached egg and cover with mock hollandaise sauce. Place muffin top on burger/egg and enjoy.
