Oishii Mahi Mahi Burgers

Pairs well with:

With strawberry and melon essences, this American original is perfectly at home with however you like to unwind.

Ingredients

2 pounds coarsely chopped Mahi Mahi
1/3 cup finely chopped macadamia nuts
1/3 cup thinly sliced green onions
1/3 cup canned crushed pineapple, well drained
1/3 cup mayonnaise
1 1/2 teaspoons seafood seasoning
1 teaspoon salt
1 egg, beaten
2 cups panko (or fine dry bread crumbs)
2 tablespoons vegetable oil for grill rack
6 large sesame seeded hamburger buns, split
6 tablespoons honey mustard
2 cups torn baby arugula leaves
2 avocados, peeled and thinly sliced
2 medium tomatoes, thinly sliced

 

Instructions

Heat gas grill to medium high heat. In a large bowl, combine Mahi Mahi, nuts, onions, pineapple, mayonnaise, seasoning, salt, egg, and panko. Mix until combined being careful not to over handle. Form into 6 patties to fit buns. Brush grill rack with oil. Place patties on grill. Cover and grill for 3-4 minutes per side until golden brown, carefully turning only once. Place buns, split sides down, on edge of grill for last 2 minutes of grilling time. To assemble, spread honey mustard on split sides of buns. Top bottom halves with a few arugula leaves, a patty, 2 avocado slices, and 2 tomato slices. Add bun tops. Serve.
