Oh So Good Osso Bucco Turkey Burgers with Gremolada Tomatoes and Garlic Cannellini Spread

I invented this recipe one day when I was considering ordering Osso Bucco at a resteraunt. I change the meat to turkey and kept many components of the traditional recipe while adjusting others to fit the burger portability. I hope you like the slow-cooked deep flavors that evolve from my fast and easy recipe.


2 pounds ground turkey
2 tablespoons vegetable stock concentrate *(see note below)
2 teaspoon fresh thyme or 1 teaspoon dry
1/4 cup Sutter Home Pino Grigio wine
2 1/2 teaspoon freshly ground black pepper, divided use
4 ripe Roma or plum tomatoes, cut in half lengthwise
1 teaspoon freshly grated lemon zest
1 teaspoon fresh parsley
2 teaspoons minced garlic, divided use
1 1/2 teaspoon Sea salt, divided use
1 15.5 ounce can cannellini beans, drained
2 tablespoons fresh lemon juice
2 tablespoons olive oil
Non-stick cooking spray
6 slices turkey bacon
6 whole wheat hamburger buns, split
6 Romaine lettuce leaves, torn to be slightly larger then the hamburger buns


Preheat a clean grill to medium-high heat.
In a large bowl gently combine the turkey, vegetable stock concentrate, thyme, wine and 1-teaspoon black pepper. Form 6 burger patties from turkey blend and let rest for 10-minutes.
Prepare Gremolada tomatoes by laying the tomatoes , cut side up, on a plate and sprinkle with lemon zest, parsley, 1-teaspoon garlic, 1/2 teaspoon sea salt and 1/2 teaspoon black pepper.
In a food processor over medium speed combine the beans, lemon juice, olive oil, 1-teaspoon garlic, 1 teaspoon sea salt and 1 teaspoon black pepper until the consistency of a thick paste to prepare garlic cannellini spread.
Spray grill racks with cooking spray. Place the bacon strips in a grill safe fry pan and grill bacon until browned on both sides, flipping once. Remove bacon to a plate.
Grill burger patties until no longer pink inside, flipping once, 4 to 6 minutes a side with the lid closed. (With the exception of the final two minutes of grilling when you toast the hamburger buns.-more on that later.)
At the same time, grill the tomatoes by placing them on the edges of the grill and let them grill untouched until browned on bottom. Do not flip tomatoes.
Grill insides of buns during the last two minutes of cooking, until grill marks are achieved.
Assemble burgers by placing a lettuce leaf on each of the six burger bun bottoms. Spread a rounded spoonful of garlic cannellini bean spread across lettuce. Place a burger on next, followed by a grilled tomato, a bacon slice and finally a bun lid in that order. Oh So Delicious, Oh So Easy, Osso Bucco Burgers!
* I use “Better Than Bouillon” brand, it is a thick paste of dehydrated vegetable stock.


This recipe comes together quickly, yet has a fantastic slow-cooked, country style flavor. Often I see recipes for Osso Bucco that involve white beans so I felt this would make a fantastic addition to the burger, as a garlicy spread. No cheese needed here. The Gremolada grilled tomatoes are so delicious and add a surprise pop to each burger bite. The burger itself is flavored with a veggie stock concentrate, which comes in a jar as a moist paste at my grocery store. I cut it with the addition of wine and thyme to the burger to round out the slow-cooked flavor in the burger. I hope you like it!
