New England Lobsta Burger Roll

Pairs well with:

White Merlot

Imagine sipping a lighter Merlot. This fresh, pale-pink wine is a nice change from traditional red or white wines.

Ingredients

Lobster Salad:
1 pound fully cooked American North Atlantic lobster meat (tail/claw mix) ,chilled
1 medium English cucumber, peeled and finely diced
1/2 cup bottled mayonnaise (Cain’s is New England local)
1 tablespoon fresh tarragon
4 small scallions, thinly sliced
1 1 /2 tesapoons Kosher or sea salt
Freshly ground pepper

burger dogs:
2 lb ground chuck -85% lean
1 /4 cup creamed corn/ purreed
1 tablespoon mayonnaise (Cain’s)
1 teaspoon minced tarragon
2 tesapoons salt
3 /4 tesapoon freshly grated pepper
vegetable oil for grill

12 New England-style hot dog buns
3 tablespoons unsalted butter, softened
Boston Bibb lettuce

 

Instructions

To prepare the lobster salad cut the meat into 1/2-inch dice. Place the cucumber in a colander sprinkled with about 1 teaspoon of salt for at least 5 minutes to drain the excess water. Rinse and shake. Combine the lobster, cucumber, mayonnaise, and tarragon. Add the scallions. Season with salt and pepper. Cover with plastic wrap and chill for 30 minutes to 1 hour.

To make the "burger dogs" preheat the grill on high. Place ground chuck in a large bowl and gently pull apart. Place the creamed corn and mayo in a small bowl and mix. Add the tarragon. Add 2 teaspoons of salt and 3/4 teaspoon freshly grated pepper to the meat and then add the corn blend . Gently combine. Divide the meat mixture into 6 equal portions. With wet hands roll each portion into a 12 inch log on a piece of wax paper. Continue with all pieces. Cut each piece into 2 equal "dogs" Lower the heat to medium on the grill and oil the grill. Place the burger dogs on the grill and rotate every 2 minutes until done. This will take 6-8 minutes.

Lightly butter both sides of each bun. Place the buns, cut side down, on the outer edges of the grill rack to toast lightly during the last 4 minutes of grilling. Grill about 2 minutes or until golden . Turn the buns over and toast the other side.

To assemble the burgers, place a piece of Bibb lettuce on the bottom of the roll and add the burger. In each roll , place a grilled burger dog , followed by equal portions of the Lobtsa salad.

Yield : 12 Lobsta Burger Dogs 2/person (like sliders)

To serve : give each person 2 Lobsta Burger Rolls and a chilled glass of White Merlot!
