Mushroom and swiss pork burger with hot bacon spinach salad

With 3 kids and a pool, we grill alot of burgers for quick easy dinners! I grow bored with a plain patty, so I try to come up with creative burgers for us to try. This one sneaks a serving of veggies into the kids, even if they don’t add the salad to the tops of theirs!

Ingredients:

Spinach Salad=

4 eggs

8 ounces of fresh baby spinach (washed and dried)

1/2 cup of chopped red onion

4 slices of bacon

1 1/2 tablespoon of sugar

3 Tablespoon of apple cider vinegar

1 Tablespoon water

1/2 teaspoon salt

1/2 teaspoon pepper

Burgers=

2 pounds ground pork

1/2 cup plain breadcrumbs

2 Tablespoon tomato paste

1 egg

1 1/2 cup sliced crimini mushrooms (washed and dried)

1/2 cup shredded zucchini

1 Tablespoon olive oil

2 Tablespoon minced garlic

1 teaspoon sage

1/2 teaspoon salt

1/2 teaspoon fresh ground pepper

6 slices of Swiss cheese

6 onion Kaiser rolls (or plain, if preferred)

1/2 cup softened butter (for toasting rolls)

2 Tablespoons vegetable oil (for preparing grill)

Instructions:

Heat grill to medium High heat

cover 4 eggs in cold water in a grill safe pot. Put on grill. Boil for 10 minutes. remove from grill.

While eggs are boiling,begin salad. Remove any long stems from spinach. Place in medium bowl, and combine with the onions. Place in refrigerator or cooler.

Heat saute pan over med high heat. Add olive oil and garlic, saute 2 minutes. Add zucchini and mushrooms. Saute until tender, approx 5 minutes. Put into large bowl. Add ground pork, tomato paste. Mix gently with the vegetables. Add 1 egg, bread crumbs and all spices. Blend well. Shape into 6 patties.

Brush the grill with vegetable oil.

Place patties onto the grill, and cook for 5-6 minutes each side, or until internal temp. reaches 155 degrees F.

Top each with a slice of Swiss cheese and remove to top rack of grill. If no top rack, remove to plate, and tent with foil.

While patties cook, Peel and slice the hard boiled eggs. Fry bacon in saute pan until crisp(can use same one from veggies!) remove bacon from pan to drain on paper towel. To the dripping in the pan, add the sugar, vinegar, water salt and pepper. Stir well till boiling. Keep warm till burgers are done.

butter the flat sides of the kaiser buns. Place on grill till golden brown.

Remove spinach and onions from refrigeration/cooler. Crumble the bacon slices into the bowl. Pour the hot bacon dressing over the top and toss gently.

To assemble the burgers, place one patty on each bun bottom. Top each with an equal serving of the salad. Place 3 slices of hard boiled egg on each. Cover with top of buns. Serve and enjoy!
