Middle Aged Fat Guy’s Teen Tested Stilton Burgers

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.

Ingredients

3 medium pickled tomatoes
1/2 an Avocado
1/4 Cup Grey Poupon Deli Mustard
1/2 Cup Ketchup
1 1/2 Teaspoon Fresh Ground Pepper (1/2 Teaspoon for the Sauce and 1 Teaspoon for the Mix)
olive oil cooking spray
1 medium whole red bell pepper
3 1/8" slices from the middle of a medium sweet onion (1015 or Vidalia)
5 medium cloves of garlic
3 dried chipotles
2 lbs ground chuck 80% lean
3/4 lb ground sirloin 90% lean
2 Teaspoons salt
Stilton cheese- good quality (about 8 ounces)
6 potato rolls for hamburgers

 

Instructions

Thinly slice 3 pickled tomatoes- set aside. Make the sauce- In a bowl mash the 1/2 avocado with a fork, then add 1/4 cup Grey Poupon Deli Mustard, 1/2 cup ketchup, and 1/2 teaspoon fresh ground pepper. Mix well and set aside. Make the Mix Spray cooking spray on grill Spray cooking spray on red pepper and set on grill. Roast pepper on direct heat. Be sure each side chars before turning. This will take at least 20 minutes -This will be very hot on the inside. Let it cool before further processing. While the pepper is roasting- Spray 3 onion slices with cooking spray and set on grill. Turn onion when it begins to brown and remove onion when both sides have lightly browned. While the pepper is roasting- fold a 12" x 8" piece of tin foil to about 4" x 4" (to give it more strength) and using a garlic press, press the 5 cloves onto the foil. Place the garlic over indirect heat and heat until the outsides begin to brown lightly. – Do not burn the garlic. Peel the cooled red pepper remove stem and seeds and cut into a small dice- you will end up with about 1/2 cup. Cut the onion into a small dice- you will end up with about 1/4 cup. Finely chop the 3 dried chipotles – you will end of with about a scant tablespoon In a small bowl combine the red pepper, onion, garlic, dried chipotles and 1 teaspoon of black pepper- mix well. Form the Burgers In a large bowl LAYER- 1/3 of the ground chuck 1/2 of the ground sirloin 1 teaspoon salt 1/2 of the red pepper mixture 1/3 of the ground chuck 1/2 of the ground sirloin 1 teaspoon salt 1/2 of the red pepper mixture 1/3 of the ground chuck Then mix with a large spoon, just enough to combine. Use a chopping and folding action. Gently form into 6 patties. Grill Spray grill with cooking spray and cook patties over direct heat. Patties should be turned only once. For medium rare wait until the sides start to brown and turn. Cut the Stilton into 1/4" slices (you may experience some crumbling of the cheese)and add to patties about 3 minutes after the turn and cook another 3 minutes to medium rare. After adding the cheese- lightly toast 6 potato rolls on the indirect heat potion of the grill. Final assembly Place 1 and 1/2 tablespoons of sauce on each roll bottom and each roll top add 3 small (ends) or 2 large (middles)pickled tomato slices to each roll bottom and then the burger and roll top Serve now!
