Meatloaf Burger

My family loves my meatloaf so much, I decided to turn it into a burger for the summer!


1 yellow pepper, roasted
1.25 lb. twice group beef brisket
0.25 lb ground pork
1 small onion, peeled and chopped
1 large carrot, shredded
4 oz. Baby Bellas, washed, stemmed and thinly sliced
2 garlic cloves, peeled and finely chopped
1/8 cup chopped parsley
1/4 cup ketchup
2 tbsp Worcestershire sauce
1 tbsp honey
1/2 tsp salt
1/2 tsp black pepper
6 Kaiser Rolls
6 tbsp Ketchup
3 cups shredded lettuce
6 1/2" slices of tomatoes


Roast the yellow pepper over a medium grill for 10 minutes until blackened on all sides. Remove from grill and put in a sealed plastic bag while preparing the other ingredients. Combine the brisket and pork in a large bowl. Add the the chopped onion, shredded carrots, sliced baby bella s, chopped garlic, parsely, ketchup, worcestshire sauce, honey, and salt and pepper. Remove the yellow pepper from the bag, peel, seed, and chop and then add to meat mixture. Combine all ingredients by hand and then form 6 patties. Cook over medium heat grill, 6 minutes each side. Slightly toast the Kaiser Roll Buns. Spread 1 tbsp Ketchup on the inside of each bun. Place the burger patties on the buns, add the shredded lettuce and tomatoes.
