This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.

Ingredients

3 lbs cooked crispy bacon ( it actually requires a little over 2 lbs but you know we all snack on bacon while it is cooking).
8 tbsp bacon fat (reserve from cooked bacon)
8 oz medium shredded cheddar cheese
8 oz colby Jack shredded cheese
2 tbsp of cream cheese
2 tbsp Sutter Home Cabernet
1 1/2 lbs of 93% lean ground beef
1 large block of hickory soaked at least one hour in water.
kosher salt
fresh cracked pepper
2 tbsp olive oil for grill
2 tbsp melted butter
six fresh sesame seed hamburger rolls
fresh bib lettuce leaves
2 large ripe beefsteak tomatoes sliced
1 sweet vidalia onion thinly sliced
3 thin sliced kosher dill pickels

 

Instructions

Crumble one pound of crispy bacon into small pieces. In a food processon mix the following ingredients on low. All the cheese, wine, 3 tbsp bacon fat the crumbled bacon pieces. Mix until it becomes a solid mix and does not crumble when taken out. Set to the side. Make six patties with the meat, put a small 1/2 tsp of bacon drippings in the middle of each burger and baste each patty with bacon drippings. Make sure grill is clean and wipe the grill down with olive oil and bacon drippings. Heat grill on hish and then lower temperature to low/medium when you put the burgers on. When you put the burgers on add the piece of hickory to the back of the grate. Cook on one side for 4 min and then flip and cook for 3 min for medium/medium well. Do not push on the burgers or flip more than once. Baste each bun with melted butter and toast ont he grill. For the last two minutes that the burgers are cooking. Turn grill off and before you remove burgers from the grill top with the cheese mixture let the burgers sit for a min or two fro the cheese to soften and begin to melt. Building the burger, bottom bun, pickels, thin slices of vidallia onion (2-3 rings), 3 strips of bacon, patty with cheese, 3 more slices of bacon, tomato, lettuce, top bun and then eat There is no way this burger wont make your mouth water.
