Mango Meet my Burger

Bacon for this recipe can be prepared ahead of time or on an iron skillet on the grill over medium heat while salsa is being prepared. About 5-10 minutes depending on grill and heat level.


Mango Salsa
2 ripe mangos diced
2 large avocados diced
1/2 red onion finely chopped
1/2 cup diced cilantro
1 jalapeno pepper minced (seeds removed)
juice and zest of 1 lime
Dash of salt and pepper
1 1/2 lb chuck
1/2 lb sirloin
1 sweet onion grated (inc. juice)
10 pcs crumbled cooked bacon
1/2 cup grated parmesean cheese
2-6 tbs. cajun spice
6 rolls (with poppyseeds on top)
oil for grill (as needed)


Prepare mango salsa by mixing first six ingredients in a medium bowl and gently mix with wooden spoon. Add salt and pepper to taste. Heat charcoal grill to medium-hot heat. Combine burger ingredients (all six) in medium bowl with hands and form six patties. Place on grill and cook 3-6 minutes per side. Remove from grill and place on buns. Top with Mango Salsa and enjoy!


Some of the amounts can be modified for desired heat level of person consuming burger. I do not like super hot things so the recipe is designed not to be too hot, by putting more cajun seasoning or using a serrano pepper instead of a jalapeno the heat factor can be increased.
