Locco Latino Burger

Ingredients

For the patties

2 pounds ground chuck
1/2 # CHORIZO ground
1 ts kosher salt
2 tbl SUTTER HOMES merlot

Guava Barbeque Sauce:
12 ounces guava paste, cut into small cubes
1/4 cup SUTTER HOMES merlot
1/2 cup ketchup
2 garlic cloves, minced
1/4 cup honey
1/4 cup lime juice freshly squeezed
1 teaspoon kosher salt

Papaya-Mango Salsa:
2 cup papaya, 1/4-inch diced
1 ripe mango, peeled, seeded, and 1/4 inch diced
1 Hass avocado, cut into small pieces
1/4 cup lime juice
2 tablespoons honey
1/8 cup finely chopped jalapeno pepper
1 1/2 teaspoons minced garlic
2 tablespoons finely chopped fresh cilantro leaves
1/8 teaspoon Kosher salt

12 slices Smithfield ham sliced 1/8 thick
6 onion rolls split
Colavita extra virgin olive oil

 

Instructions

For the Patties

Combine the ground beef, ground chrorizo, salt and Sutter Home wine in a bowl with a folding motion, gently not compact the meats. Form 6 equal patties to fit buns. Refrigerate till needed.

For the Guava BBQ Sauce

In a small saucepan, combine guava paste, Sutter Homes merlot, ketchup, garlic, honey,orange and lime juices and salt. Simmer over low heat,
stirring slowly with a wooden spoon until the guava paste has dissolves and the sauce is a thick, syrupy sauce, 15 to 20 minutes. Cool to room temperature. Keep warm.

Combine papaya, mango, avocado lime juice, honey, jalapeno pepper, garlic, cilantro and salt together in a medium bowl. Toss, cover, and refrigerate until ready to serve. Bring to room temperature before serving.

Preheat grill to medium high. Wipe down grill rack with olive oil and brush patties with BBQ sauce then place patties on rack cover and cook for 3 to 4 minutes, baste with BBQ sauce and flip cook for another 5 minutes for medium, baste 2 more times while patties are cooking. When there is 2 minutes left on the patties, place ham and buns on grill. Grill ham till nicely charred and buns till golden brown.

to assembly
Place bottom of bun on plate and spoon papaya-mango salsa to cover bottom bun. Place pattie over salsa, brush with more BBQ sauce, place 2 slices grilled ham over pattie,brush top with BBQ sauce and top pattie. Serve
