Lobster sausage burgers


4 Live Maine Lobster
4 ounces Scallops
1 tablespoon fresh parsley
3 egg whites
1 teaspoon crushed red pepper
1 teaspoon Salt and Pepper mixed
4 to 6 bbb tablespoons of caramelized onion
1 cups of arugula
6 slices of tomato
6 Hamburger Buns


Cook the live lobster for 3 minutes in boiling water, remove and drop in an ice bath. Remove the meat from the shells and dice into small pieces. In a food processor combine the 4 scallops 3 egg whites salt and pepper and crushed red peppers. Remove from processor and mix together with the lobster meat and form into lobsterburger patties. Grill the patties and place on the bottom of the hamburger bun dress the top of the bun with tomatoes then arugula, and caramelized onions. And then you have the ultimate burger.


The lobster are just being cooked enough to get them out of the shell. I would some times make lobster sausages out of this recipe but stuff it into casings. But I always had the last bit the would not go into the casing and I made a hmaburger out of it and it was really good.
