Limburger- a stinky cheese is better than it’s reputation. It is strong and tart a little like feta which is commonly used in Greece with lamb.Simple with assertive flavors this burger is absolutely Delicious.

Ingredients:

1 egg

2 teaspoons of white wine vinegar

1/2 teaspoon of onion salt

1 teaspoon of dry mustard

1 cup vegetable oil

2 tablespoons of grated onion with juice.

2 lbs ground lamb

1/2 teaspoon garlic salt

1/2 teaspoon freshly ground black pepper

3 once of Limburger cheese

3 tablespoons of butter, softened

6 onion rolls split

Instructions:

First make the onion sauce. In a blender combine egg, vinegar, onion salt, dry mustard. Start blending a slowing dribble in oil until all the oil is absorbed and you have a creamy sauce. remove from blender and stir in onion, Set aside. Patty ground lamb into 6 1/3 pound patties. season with garlic salt and pepper.Grill lamb patties to medium rare over high heat approximately 2 and 1/2 minutes per side. Top each burger with l1/2 once Limburger and cover to melt cheese. Remove and rest while you toast buns. Toast onion rolls about 1 minute until golden brown. Butter rolls. Spread with about 2 teaspoons of mayo/onion sauce. crown with Limburger lamb burger.
