Kung Pao Chicken Burgers

Ingredients

Chili Mayonnaise:
3/4 cup Mayonnaise
2 tablespoons chili oil
1/2 teaspoon salt
Peanut Sauce:
4 tablespoons natural peanut butter
2 tablespoons sesame oil
2 tablespoons soy sauce
1/8 cup water
Juice from 1/2 lime.
Patties:
2 pounds ground chicken
2 tablespoons fresh ginger, finely chopped
1 tablespoon fresh garlic, finely chopped
2 tablespoons sesame oil
1 tablespoon rice vinegar
2 tablespoons hoisin sauce
2 tablespoons soy sauce
1 bunch green onions, finely chopped
1 cup plain bread crumbs
Vegetable oil, for brushing the grill rack
6 Kaiser rolls, split

 

Instructions

Directions: Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium high. To make the chili mayonnaise, combine the mayonnaise, chili oil and salt in a bowl. Mix well and refridgerate until serving. To make the peanut sauce combine the peanut butter, sesame oil, soy sauce, water and lime juice in a small fire-proof sauce pan. Place the sauce pan on the grill and stir constantly until the peanut butter has melted and all ingredients are well combined. Set aside. To make the patties, combine the chicken, ginger, garlic, sesame oil, rice vinegar, hoisin sauce, soy sauce, green onions and bread crumbs in a large bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 6 equal portions and form portions into patties to fit the rolls. Brush the grill rack with oil. Place the patties on the rack, cover, and cook, turning once, until done to preference.About 4-5 minutes on each side. During the last few minutes of cooking place the rolls cut side down, on the outer edges of the rack to toast lightly. To assemble the burgers, spread the peanut sauce on the roll bottoms. Place a patty on the roll bottom. Next spread a generous amount of the chili mayonnaise on the roll tops. Place on top of the patty and serve. Makes 6 burgers
