Jazzy Gyro Burgers with Grilled Halloumi Cheese and Zesty Yogurt Sauce

Ingredients

Jazzy Gyro Burgers (makes 6 burgers)
2 lb ground chicken
3 TBS Greek Yogurt (2% fat or Full fat)
1 1/2 TBS garlic paste
3 TBS Sutter Home Chardonnay
¼ cup Panko bread crumbs
3 TBS fresh oregano, finely chopped
2 tsp kosher salt
1 tsp ground pepper
Zesty Yogurt Sauce
1 Cup Greek Yogurt (2% fat or Full fat)
2 tsp garlic paste
2 TBS fresh squeezed lemon juice
3-4 TBS fresh mint, finely chopped
2 TBS capers, drained, rinsed and roughly chopped
1 tsp Kosher Salt
¼ tsp ground pepper
Olive Oil for grill
Halloumi cheese, sliced ¼ – ½ inch thick
6 Greek Pita Breads
Romaine lettuce, chopped

 

Instructions

Preheat the gas grill to medium heat (on my grill, that translates to 350 degrees). Prepare the burgers. In a medium bowl, combine the ground chicken, Greek yogurt, garlic paste, Sutter Home Chardonnay, Panko bread crumbs, oregano, salt and pepper, until just combined. Form into 6 burgers, and place on a cookie sheet. Cover with plastic wrap and place burgers in the fridge for 30 minutes. Prepare the Yogurt Sauce. In a small bowl, combine the Greek Yogurt, garlic paste, lemon juice, mint, capers, salt and pepper, until combined. Set aside. Just before grilling the burgers, oil the grilling surface. Remove the burgers from the fridge and place each burger on the grill. Cover the grill and cook the burgers for 6 minutes. After 6 minutes, flip the burgers, close the grill lid and cook for another 6 minutes. With 3 minutes left in the grilling time, uncover the grill, and place the Halloumi cheese onto the grill. Cover the grill and grill on the first side for 2 minutes. Flip the cheese and cover the grill again, grilling the cheese for 1 more minute on the other side. Remove both the burgers and the Halloumi cheese from the grill at the same time. Set the burgers and cheese aside. Place the 6 Greek Pitas on the grill, leaving the lid up. Leave the pitas on the grill for 2 minutes. While the pita is warming on the grill, cut up the burger into chunks. Remove the pitas from the grill and build your Jazzy Gyro Burger. Take a warm pita, grilled side up, and put a handful of chopped lettuce on it, followed by a cut up burger, a few slices of the grilled Halloumi cheese, and 3 or 4 spoonfuls of the zesty yogurt sauce. Roll or fold up the pita, and enjoy!
