Jamaican Me Crazy Burger

Ingredients

Sweet-Hot Caramelized Onions
2 medium sweet onion, halved and sliced
1 Large mango, peeled, pitted and cubed
1 tablespoon Pepper Sauce
1 tablespoon dark brown sugar
Avocado spread
2 avocados peeled and mashed
1/2 cup sour cream
1 tablespoon mango (removed from fleshy side of mango skin) Patties
1 1/2 pound ground chuck
1/2 pound ground pork
1 1/2 teaspoons kosher salt
1 tablespoon coursely ground black pepper
1 tablespoon dark brown sugar
1 tablespoon Pepper Sauce
6 teaspoons Jamaican jerk seasoning
Vegetable oil, for brushing on the grill rack
6 slices honey ham (1/4 inch thick)
6 slices pepper jack cheese (1/4 inch thick)
6 potato rolls

 

Instructions

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. To make the caramelized onions, combine the onion, pepper sauce, mango and brown sugar in a 10-inch nonstick, fire-proof skillet, cover with a lid, and place on the grill rack. Cook the onion mixture for 15 to 20 minutes, stirring occasionally, until the onions are caramelized and most of the liquid is evaporated. Remove the pan from the grill and set aside. To make the spread, combine the avocado, sour cream and mango in bowl, cover, and set aside. To make the patties, combine the chuck, pork, salt, pepper, brown sugar, pepper sauce, and seasoned salt in a large bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 6 equal portions and form the portions into patties to fit the rolls. Apply Jamaican jerk seasoning by rubbing into both sides of patty. When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack, cover, and cook, turning once, until done to preference, 5 to 7 minutes on each side for medium. Meanwhile, grilling the honey ham 2 to 3 minutes on each side. Place the rolls, cut side down, on the outer edges of the grill rack to toast lightly. To assemble the burgers, spread a generous amount of the avocado spread on each roll bottom (cut and tosted side). Stack ham, cheese, a patty and an equal portion of the onion and mangos. Add the roll tops and serve. Makes 6 burgers
