Italian Steak Burgers with Zesty Wine Sauce

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.

Ingredients

Zesty Wine Sauce
¼ cup Sutter Home Family Vineyards Dark Zinfandel Wine
¼ cup tomato paste
¼ cup packed light brown sugar
¼ cup Grey Poupon Dijon Mustard
Italian Steak Burgers
2 pounds of ground beef sirloin ¼ cup Sutter Home Family Vineyards Dark Zinfandel Wine
1/3 cup tomato paste
1 teaspoon salt
1 teaspoon coarse ground black pepper
1 teaspoon minced garlic
½ cup finely diced onions
2 teaspoons finely chopped fresh oregano leaves
2 teaspoons finely chopped fresh basil leaves
1 tablespoon grated Pecorino Romano Cheese from jar
6 slices Mozzarella Cheese
non-stick olive oil cooking spray
6 kaiser rolls
1 cup zesty wine sauce
6 slices tomato (cut in ½ inch slices)
6 leaves red leaf lettuce

 

Instructions

In a medium sized mixing bowl combine all ingredients for the wine sauce. Mix until well blended; cover and refrigerate. Yields 1 cup (serving size: 2 tablespoons). In large size mixing bowl, mix together beef, wine, tomato paste, salt, pepper, garlic, onion, oregano, basil, and grated Romano cheese. Divide mixture into 6 equal portions; shape into 1 inch thick patty. Heat grill; coat grill with cooking spray. Place patties on grill; cover and grill on medium to high heat for 6-8 minutes per side until done (160 degrees F. for medium and 170 degrees F. for well done burgers). Use meat thermometer to accurately ensure doneness. Top each burger with one slice cheese and grill 2 more minutes. Slice each roll in half and spread the bottom roll with 2 tablespoons of zesty wine sauce. Top with burger, tomato, lettuce and top of roll. Yields 6 servings.
