Iowa Burger with Grilled Sweet Corn

This burger captures the midwest and Iowaessence. It is a great smoky burger with plenty of cheese, locally raised bacon and Iowa’s own fresh sweet corn. It is simple, hearty and very flavorful; a comfort food straight from the heartland of the US.

Ingredients:

2 lbs ground beef (93% lean)
1 tbsp steak seasoning blend
1 tbsp Worcestershire
12 slices Beeler’s bacon
2 onions, thickly sliced
3 ears sweet corn; silk removed, husks intact
6 slices sharp cheddar cheese
6 slices pepper jack cheese
6 tbsp mayonnaise
6 kaiser rolls

Instructions:

Prepare grill. Cover half of the lower grill grate with foil. Preheat/light the grill.

Soak the corn in cold water until ready to use.

Mix the beef, steak seasoning blend and Worcestershire sauce together in medium bowl. Shape into 6 patties.

Put the patties on the top rack of the grill. Arrange the bacon slices on the foil in a single layer. Close the grill and cook 10 minutes. Open grill and turn over the bacon. Close and cook another 10 minutes until crisp. Remove bacon and set aside. Flip the burgers.

Spread the onion slices over the foil. Add the ears of corn to the back half of the grate that is not covered in foil, close the lid and cook 10 minutes. Turn the corn over and cook 10 more minutes with the lid closed. Open the grill and add 1 cheddar cheese slice and 1 pepper jack cheese slice to each burger. Cook just until the cheese melts.

Remove the burgers, onions and corn from the grill. Assemble the burgers. On the bottom bun layer in order 1 burger, 2 slices of bacon, 1/6 of the onions, and 1/6 of the sweet corn. Spread 1 tbsp mayonnaise on the top bun and place on top of the burger.
