Inside and out Peirogi Burger

Ingredients

Middle:
6 TBS Pre-made Mashed Potatoes – from the refrigerated section of your grocery
3 TBS graded Cheddar Cheese
3 TBS grated Vidalia Onion
Topping:
6 TBS salted Butter
2 Vidalia onions – sliced
8 TBS sauerkraut – canned
4 tsp Brown sugar
Burgers:
2 ½lbs. Ground chuck
3/4 cup of grated Vidalia Onion
1/2 cup Potato Buds
1 Egg
1 tsp ground nutmeg
2 tsp salt
1 tsp pepper
Colavita Olive Oil for brushing the grill racks
¾ cup of Shredded Cheddar Cheese – to melt on Burgers
6 Kaiser rolls from the bakery – sliced horizontally
6 TBS Sour Cream
6 TBS Chives – chopped

 

Instructions

Middle: In a small bowl add 6 TBS Pre-made Mashed Potatoes, 3 TBS graded Cheddar Cheese and then grate 3 TBS of Vidalia Onion. Mix well and form into 6 disks aprox. 1 ½” to 2” in diameters rounds. Refrigerate until you build your burger patties. Topping: Start the grill and preheat (15 mins) to a temperature of 450 degrees. Slice the 2 Vidalia Onions into rings, then add butter to a pre-heated a saute pan on the grill. Then add the rings of onion and start to saute for 15-20 mins., once the onions are aprox 3/4 of the way to carmelized add the 4 TBS of brown sugar to disolve & then the 8 TBS of sour kraut to warm through. Remove from heat and keep warm in foil until you build your burger. Turn off the grill. Burgers: In a large bowl place 2 ½lbs. Ground chuck, grate 3/4 cup of Vidalia Onion and then add, 1/2 cup Potato Buds, 1 Egg, 1 tsp ground nutmeg, 2 tsp salt and 1 tsp pepper. Mix all ingredients well. Separate the mixture into 12 equal parts and form into patties. Take 1 patty and place 1 disk of mashed potao mixture in the middle and top with a second patty and seal the edges to form a stuffed patty. Place on tray and continue building the 5 other stuffed patties. Grease the grill racks with the Colavita Olive Oil. Start the grill and preheat (15 mins) to a temperature of 450 degrees. Place burgers onto the grill and close the lid, let cook 4 to 5 mins. Turn the burgers to create grill marks & cover, cook another 3 to 4 mins. Flip burgers, cover and cook 3 to 4 mins. Turn burgers to create grill marks, cover & cook another 2 mins. Then For the last 2 mins. of cooking, place 2 TBS of the cheddar cheese on each burger and then top with the sauted onion & sour kraut mixture onto each burger to heat & melt the cheese. Remove from heat. During the entire time you are cooking the burgers, you are trying to maintain a grill temperature of 400 to 450 degrees. To plate: Place 6 of the Kaiser bottoms onto the plate, spread each bottom with 1TBS of the sour cream & 1tsp of the chives. Top with the burger.
