Hunan Orange Beef Burgers

Ingredients

Orange Mayonnaise:
2/3 cup mayonnaise
1/2 teaspoon crushed red pepper
1 teaspoon orange zest
2 teaspoon fresh squeezed orange juice
2 green onions, finely chopped
Broccoli Slaw:
3 cups washed and ready-to-use shredded broccoli, carrots and red cabbage coleslaw mix
4 tablespoons Orange Mayonnaise (from above)
Patties:
3 cloves garlic, peeled
1/2 inch slice of fresh ginger (approximately 1 inch in diameter), peeled
2 pounds ground chuck
3 tablespoons light brown sugar
4 tablespoons soy sauce
3/4 teaspoon crushed red pepper
1 teaspoon orange zest
1 1/2 tablespoons fresh squeezed orange juice
Salt
Vegetable oil, for brushing on grill
6 sesame buns, split

 

Instructions

Preheat gas grill to medium-high. To prepare the orange mayonnaise, combine mayonnaise, crushed red pepper, orange zest, orange juice and green onions in a small bowl. Mix thoroughly. Reserve 4 tablespoons to mix with the broccoli slaw; refrigerate remaining orange mayonnaise until serving. To prepare broccoli slaw, combine broccoli slaw mix with reserved orange mayonnaise in a medium bowl. Refrigerate slaw until serving. To prepare the patties, finely chop the garlic and slice of ginger in a food processor. Combine garlic, ginger, ground beef, brown sugar, soy sauce, crushed red pepper, orange zest, and orange juice in a large bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide meat into 6 equal portions and form meat into six patties, a little larger in diameter than the buns. Avoid pressing firmly to ensure tender, light burgers. Sprinkle each patty with salt. Clean hot grill with wire brush, if necessary. Brush the grill rack with oil. Place patties on grill rack and cook, turning once, about 5 minutes on each side for well done. To retain moisture and juices, do not flatten burgers during cooking. During the last minute of cooking, place split buns, cut side down, on the outer edge of the grill rack and toast lightly. To assemble the burgers, spread a generous amount of the orange mayonnaise over the cut sides of the buns. On each bun bottom, place a patty and top with 1/2 cup of broccoli slaw. Add bun top and serve immediately.
