Honey Mustard Spinach Burger

This recipe produces a smooth textured burger with a sweet mustard dressing and Spinach covering. It is very simple and has a nice blend of autumn flavors.

Pick out 2 pounds of boneless beef chuck steak and have it fresh ground at your grocer.
2 Tablespoons mayonaise
1/2 teaspoon salt - I use medium ground
1/2 teaspoon pumpkin pie spice
1/8 teaspoon coarse ground pepper
1/4 cup honey
1/4 cup grey poupon mustard
1/4 cup mayonaise
1/4 lb fresh spinach (1 bunch)
6 Potato hamburger buns
3 Tablespoons butter

Mix beef with mayonaise, salt, pumpkin spice, and pepper. Form into 6 large approximately 1/2" thick patties. Grill on, preheated to low, gas grill (may grill on coals but not too hot or close to fire). Grill each side about 5 minutes until 160 degrees in the center of burger or till juices run clear. I do not press down on burgers with turner as this drys burgers out. Meanwhile mix honey, mustard, and mayonaise together in small bowl for spread. Toast inside of buns in toaster on bagel setting and butter while hot. Spread both sides of buns with mustard spread dividing evenly. Place grilled burgers on buns and top generously with spinach. Top with bun and serve immediately. Enjoy!

I would serve with fresh sliced peaches in season or some type of apples(cooked in butter and brown sugar, applesauce, or fresh apple slices with caramel dip)when not. The Spinach with the mustard dressing, pumpkin pie spice in the burgers and the potato buns makes a nice August-September flavor combination. This burger is made with ingredients available year around. Enjoy!
