Hof brau burger with Red Cabbage Kraut and Avocado mustard dressing
Hi, I am a former deli chef, part time church function chef, and full time recovery room nurse. I enjoy cooking. i love to blend flavors and textures . I have created a hot and spicy burger accompanied with a slightly sweet, crunchy topping with a tart and tangy dressing. i hope you enjoy.
1.2 large california avocados
2.1/4 cup GREY POUPON MUSTARD
3.7 1/4 tsps. seasoned salt (1/4 tsp. for the avocado mustard,6 tsp. reserved for the burger mixture, 1tsp. for the red cabbage kraut)
4.1 tsp. red pepper flakes
5.3 tsp. coarse cround black pepper
6.4 cups shredded red cabbage
7.1 cup coarsely diced red onion
8.1 tsp. carraway seed.
9.1/2 cup COLAVITA RED RASPBERRY VINEGAR
10.1/4 cup COLAVITA EXTRA VIRGIN OLIVE OIL
11.2/3 cup light brown sugar packed
12.1/2 cup honey
13.1 1/2 lbs. ground sirloin
14.8 oz. HOT ground sausage
15.6 slices jarlsburg cheese
16.6 onion rolls sliced
vegetable oil for grilling rack
Prepare a medium hot fire in a charcoal grill with a cover, or preheat a gas grill to medium high. to make the avocado mustard halve,peel and deseed two large CALIFORNIA avocados. Place in a medium sized mixing bowl. Add 1/4 cup GREY POUPON MUSTARD, 1 tsp. red pepper flakes,and 1/4 tsp seasoned salt. Blend and chop all ingredients into a chunky,creamy consistancy. Cover and refridgerate. To make the HOF BRAU burgers slice the 1 1/2 pounds sir loin into strips then cut into cubes. Using a food processor grind about a 1/4 of the mixture and repeat until all the meat is ground. place in a large mixing bowl. add 8 oz. JIMMY DEAN HOT ground sausage ,6 tsp. season salt,and 3 tsp. coarse ground pepper.handling the meat as little as possible mix well. divide the mixture into 6 equal portions and form into patties to fit the rolls. place on a tray,cover and refridgerate. To make the red cabbage kraut add 1/2 cup COLAVITA RED RASPBERRY vinegar,1/4 cup COLAVITA EXTRA VIRGIN OLIVE OIL,1 tsp. carraway seed, 1/2 cup honey,1 tsp. season salt to a large mixing bowl. Combine well until the ingredients are well mixed. Halve, then quarter and core, a medium head of red cabbage. Shred, then cut coarsely. Should equal about 4 cups.Add to the blended liquid ingredients. Peel,slice,and coarsely dice 1 med. red onion, add to the mixing bowl and toss all ingredients until well coated. Pour into a 10 inch fire proof skillet. Place on the hot grill,cover and cook for 25-30 minutes,stirring occasionally until liquids have reduced. When the red cabbage kraut has reduced remove and cover. Brush the grill with vegetable oil and place the patties over medium heat. Cover and cook for approximately 5-7 minutes on each side, turning once, until done to preference. THEN TOP EACH PATTIE WITH A GENEROUS AMOUNT OF RED CABBAGE KRAUT AND ONE SLICE OF jARLSBURG CHEESE over the red cabbage kraut.. Cover and cook for approximately 30 seconds or until cheese is softened. Remove to a warm tray. Place the onion rolls, cut side down along the edges of the grill to toast, slightly brown, remove and assemble the hof brau burger. Spread a generous amount of the avocado mustard to the cut side of each half of the onion rolls. Place the pattie on the bottom half,top with the top half and serve.
