Hazelnut Crusted Chicken Burger

Ingredients

4 pounds boneless, skinless chicken (use 2 pounds boneless skinless chicken breast and 2 pounds boneless skinless thigh meat.)
1 Tablespoon kosher salt
2 teaspoons fresh ground black pepper
2 Tablespoons chardonnay wine
3 cloves garlic finely chopped
2 Tablespoons Dijon mustard
1 Tablespoon fresh rosemary finely chopped
1 Tablespoon fresh sage finely chopped
2 cups coarsely chopped hazelnuts
2 small avocados, sliced in 12 slices
SAUCE:
1 1/2 cups best quality mayonnaise
1/4 Dijon mustard
2 teaspoons finely chopped fresh rosemary
2 teaspoons finely chopped fresh sage
1 clove garlic finely minced
1 Tablespoon wine
6 multi-grain Kaiser rolls
12 slices pre-cooked bacon
6 thin slices fresh tomato
6 red leaf lettuce leaves
Vegetable oil for brushing on grill

 

Instructions

To make chicken patties: 1. In a food processor combine chicken and coarsely chop. 2. Add the following ingredients: salt, pepper, wine, garlic, Dijon mustard, rosemary, sage. 3. Blend just until all is combined. 4. Divide mixture into 6 equal portions and form patties to fit the buns, handling the mixture as little as possible as not to compact it. 5. Place hazelnuts in a shallow bowl or pie plate. Roll chicken patties in nuts and lightly coat. To make sauce: 1. Combine following ingredients, mayonnaise, Dijon mustard, rosemary , sage, garlic, wine. 2. Set aside. Cooking the patties: 1. When grill is ready, brush the grill rack with vegetable oil. 2. Place the patties on the rack, cover, and cook, turning once, until done, 5 to 6 minutes on each side, 170 on an instant read thermometer. 3. During the last few minutes of cooking place 2 avocado slices and a slice of cheese on each patty, 4. Place rolls, cut side down, on the outer edges of the rack to toast lightly. 5. Slightly warm bacon on grill last minute of cooking. To assemble the burgers: 1. Cover the cut sides of the roll bottoms with a generous portion of sauce. 2. On each roll bottom, place a patty with avocado and cheese, 3. Top with warmed bacon, tomato slice, lettuce leaf, and roll top, serve.
