Havana Nights Burger

I was born and raised in Miami, FL and my family is all from Cuba so I grew up with the flavors of Cuban cooking. Being Cuban-American I think this burger perfectly meshes my Cuban heritage with my American upbringing. America today is a melting pot of flavors and this burger encompasses 2 cultures that are a part of me!

Ingredients:

1 1/2lb Ground Beef
1/2lb ground Chorizo
1 tsp kosher salt
1 tsp black pepper
1 tsp ground cumin
3 garlic cloves minced
1/2 medium red onion diced
12 slices Swiss Cheese
6 hamburger buns

For chimichurri sauce:
1/4 cup olive oil
1/3 cup red wine vinegar
3/4 cup fresh Italian parsley, chopped
3 tablespoons fresh cilantro, chopped
3 tablespoon fresh lemon juice
4 large cloves garlic, chopped
1/4 tsp salt
1/4 tsp black pepper

Instructions:

In a large bowl, combine ground beef and chorizo. Add salt, pepper, garlic, cumin, and onion. Mix until all ingredients are combined. Form 6 patties about 3/4inch thick.

Separately in a food processor, add the parsley, cilantro, vinegar, lemon juice, garlic, salt and pepper. Grind ingredients and slowly stream in the olive oil. Set aside.

Place patties on hot grill. Grill about 6 minutes on each side, only flipping once. Add 2 slices of swiss cheese to each patty and cover grill to melt (about 15 seconds). Remove patties from grill.

Lightly toast the rolls on the grill. Smear the chimichurri sauce on both sides of the bread and add 1 cooked burger patty to bottom half of roll, top with top half of roll and enjoy!
