Ham Kass Burger – Dutch

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.

Ingredients

Hamburger
1. 2 lb of ground beef (50% chuck 50% sirloin) 15 – 20% fat
2. ½ lb of ground pork
3. 24 Pretzel Snaps, regular flavor, crushed
4. 1 medium onion, grated
5. ½ green pepper, grated
6. 4 sprigs of parsley, minced
7. 1/4 cup whole milk
8. 2 large eggs, scrambled and hand mixed with milk
9. 1 tsp sea salt, fresh ground fine in coffee grinder
10. 1/2 tsp of poultry seasoning
11. 1/2 tsp of white pepper, fresh ground course in coffee grinder Topping
12. 6 pieces Country Ham Bacon, very thin sliced, approx 3 ¼ â€Â X 3 ¼ â€Â each piece, (grilled crisp while meat is resting)
13. Grey Poupon Deli Mustard
14. 6 slices of 18-month aged Gouda (sliced while meat is resting) 15. 6 slices onion, large Vidalia, thin sliced (sliced while meat is resting)
Bun
16. 6 Bakery Kaiser roll, fresh baked, sliced and toasted on grill, (toasted while meat is resting)
Grill
17. Oil for grill

 

Instructions

Hamburger cooking directions: Hand-mix all hamburger ingredients (this can take up to 30 minutes) and let meat rest for one hour. Last 35 minutes of meat resting period, pre-heat grill, and approx 15 minutes, cook bacon crisp, toast meat side of buns, watch buns closely for burning. Set buns and bacon aside. Separate hamburger mix into 6 equal portions and mold each portion into a firm patty, approx ½ to ¾ inch thick. Grill hamburger on high heat to sear and crisp outside, then move to medium heat and cook to each individual preference. My preference is medium well, approx. 4-5 minutes per side on medium, with lid closed. Last 45 seconds put on one piece of grilled, crisp country ham bacon and one piece of Gouda cheese on top of each hamburger, close grill. Spread mustard on bottom and top bun, place hamburger cheese side up on bottom bun, put sliced onion on top of hamburger and place top of bun on hamburger and enjoy.
