GreekMexican-Opah-Mescla burger

I am born of greek parents. My children are 1/2 Puerto Rican too. Living in Queens NY we are exposed to many different ethnic flavors and I experiment around with flavors. I eat feta with everything and like the salty flavor--especially when it is cooked--no need to add salt. It disappears to the eye-but coupled with the flavor of the chipotle and wochestershire sauce--imparts a subtle rich flavor to grilled beef. The breadcrumbs and egg, when well blended with the meat,keeps the grilled burger softer and juicier.


Burger meat mix:
1lb sirloin ground beef
1 cup Crumbled feta cheese
1 large egg
1/2 cup Italian flavor bread crumbs
2 tablespoons Worcestershire sauce
1 tablespoon Chipotle hot sauce
Brushing mix for grilled burgers-Blend in small bowl:
1/2 cup olive oil
1 teaspoon dry oregano
3 tablespoons lime juice


1.Mix all ingredients until all ingredients are well blended and form patties (I do this by hand) 2.Brush patties with mixture of olive oil,lime juice and oregano several times while grilling 3.When burgers are done, brush the buns with same olive oil grilling mixture and toast lightly over grill. 4.Serve with white sweet onion slices and tomato slices inside bun


I hope this recipe hits the spot. By using feta cheese there is no messy cheeseburger cheese melting and burning on the grill. The fresh tomato and sweet onion add a little juice to the grilled meat and bun. I like to add flavorful mustard, but most prefer as is!
