Gourmet Greek Burger

This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.

Ingredients

Burger:
1 pound lean ground beef or lamb
1/3 cup crumbled feta cheese
1/2 cup Kalamata olives, finely chopped
salt and ground black pepper to taste
1 tablespoon oregano
4 pita breads, the top fourth cut off
1 medium tomato, thinly sliced
1 small cucumber, chopped
1 small purple onion, thinly sliced
1 small cooked purple beet, chilled and thinly sliced
Sauce:
8 ounces nonfat plain yogurt
1 garlic clove, pressed and chopped
2 tablespoons fresh chopped mint
2 tablespoons chopped cucumber

 

Instructions

Preheat a charcoal or gas grill. Mix together the ground meat, feta cheese, olives, and oregano. Season with salt and pepper. Shape into 4 oval patties and set aside. To prepare sauce, stir together the yogurt, garlic, mint, 2 tablespoons of cucumbers and set aside. Grill the burgers over hot grill approximately 5 to 7 minutes on each side, or until cooked through. To serve, place each cooked burger inside a pita pocket along with the tomatoes, cucumbers, beets, onions, and a dollop of yogurt sauce. Sprinkle with more oregano if desired.
