Ingredients

Burger
1 ½ pounds ground chuck
small red onion
1 tsp. salt
½ tsp freshly ground pepper
6 large ripe figs
Toppings
Six thin slices proscuitto ham
Six ounces goat cheese
Olive oil for brushing on grill and rolls
Six crusty rolls
6 Tablespoons honey to drizzle on rolls

 

Instructions

Directions Preheat gas grill to medium-high heat To make the patties, combine ground chuck, onion, salt and pepper. Mix meat well without over mixing. Chop figs. Divide mixture into six equal portions, place equal amounts of fig inside each portion and shape into patties. When grill is preheated, brush with oil to prevent sticking. Place patties on grill, cover and cook, turning once, until done to preference, 5 to 7 minutes on each side for medium. Shortly before burgers are ready, place proscuitto on grill for about 30 seconds on each side, just long enough to warm up. When burgers are nearly done, brush rolls with oil and place cut side down on grill to lightly toast. When toasted, drizzle with 1 Tablespoon honey on each half. To assemble burgers, place burger on bottom roll, top with proscuitto and goat cheese, add top roll and serve. Makes 6 burgers.
