Fiesta Fajita Burger

Ingredients

1/4 cup Colavita Extra Virgin Olive Oil
1 pound yellow onion, peeled, cut lengthwise in half and slice crosswise into 1/2 inch thick slices
2 teaspoons crushed fresh garlic
1 large sweet green pepper, seeded, slice lengthwise 1/4 inch thick
1 large sweet red pepper, seeded, slice lengthwise 1/4 inch thick
1/3 cup Worcestershire Sauce
1/3 cup lime juice
2 pounds ground chuck
1 teaspoon ground chipotle chili powder
3/4 teaspoon garlic powder
3/4 teaspoon ground cumin
3/4 teaspoon onion powder
1/4 teaspoon ground black pepper
2 teaspoons kosher salt
2 tablespoons chopped fresh jalape̱o Рremove seeds before chopping
vegetable oil for brushing grill rack
12 (5 to 6-inch) flour tortillas
9 ounces Queso Fresco, crumbled, divided into 6 equal portions
18 thin slices of Big Boy tomatoes or similar large tomato

 

Instructions

Preheat gas grill to medium high temperature. (On my grill that is 425 to 450 degrees.)

Heat olive oil in a 10-inch heavy grill safe skillet. Once oil is hot add onion, cook for 3 minutes, stir occasionally. Add crushed garlic, green and red peppers put lid down on grill, cook for 4 minutes stir occasionally. Add Worcestershire Sauce and lime juice, stir and cook for 2 minutes. Remove from grill and cover with a lid or foil.

To make patties: Combine the chuck, chipotle chili powder, garlic powder, cumin, onion powder, black pepper, kosher salt, and jalapeño peppers in a large bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 6 equal portions and form the portions into patties to fit the tortillas.

When grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack, cover, and cook, turning once, until done to preference, 5 to 7 minutes on each side for medium. Remove patties from grill and cover loosely with foil until ready to build burger. Place tortillas on grill rack for 30 seconds or until warm.

To build burger: Place patty on each of 6 tortillas, sprinkle each with a portion of Queso Fresco, top each patty with equal portions of onion mixture and 3 thin tomato slices. Finish the burger with a tortilla on top and serve.
