Fiesta Burger

This is a nice change to a traditional hamburger. These burgers are easy to make and are very tasty.

2 lbs. ground sirloin
1/2 cup chopped onion
1/4 cup chopped red pepper
1/4 cup chopped green pepper
1 tsp chopped garlic
1/4 cup italian dressing
1/2 cup italian bread crumbs
2 tbsp Adobo seasoning
1 tsp salt
1 tsp pepper
1 tbsp chili powder
1 cup cubed velveeta cheese
1/2 cup rotel tomatoes with green chilis (drained)
4-6 buns
1/4 cup mayonnaise

Place first 11 ingredients (through chili powder) into a bowl . Using your hands, make sure all ingredients are thoroughly mixed together. Seperate mixture into 4-6 portions. Shape each portion into a round burger patty. Place a pan on the stove and put on Medium Heat. Cover the bottom of the pan with butter. Once the butter is melted, place the burger patties into the pan and cover. Once of the top of the burgers begin to turn brown, then flip the burgers over (about 5 minutes). Leave the burgers on the second side for an additional 5 minutes. In the meantime, place the velveeta cubes and rotel tomatoes into a microwaveable dish. Place into the microwave for about 2 minutes until fully melted and stir together. Place a bun on each plate and spread with 1 tbsp of mayonnaise. Remove the burgers from the pan and place onto the bun. Top each burger with 4 tbsp of the velveeta cheese mixture (or this can be served on the side for dipping). Place the top of the bun on each burger and serve.
