Creamy Bruschetta Burger

Ingredients

Creamy Bruschetta Salsa:
3 Roma Tomatoes, diced
1 colve garlic, chopped
2 T fresh basil, chopped
2 T Balsamic vinegar
1 T Colavita extra virgin olive oil
1/4 tsp kosher salt
1/8 tsp fresh ground pepper
3/4 cup mayonnaise
Patties:
2 lbs ground chuck
2 tsp kosher salt
1/2 tsp freshly ground pepper
Colavita extra virgin olive oil, for brushing the grill rack
6 slices of Mozzarella cheese
6 Potatoe buns, split

 

Instructions

Preheat your gas grill to high.
To make the Creamy Bruschetta Salsa, combine the tomatoes, garlic, basil, balsamic, olive oil, salt and pepper in a medium bowl. Mix in the mayonnaise. Set aside.
To prepare the aptties, combine the chuck, salt and pepper in a larger bowl. Mix together using hands. Divide into 6 equal parts and form into patties.
Brush the grill rack with olive oil. Olace the patties on the grill, cover and cook for 5 minutes. Turn the patties, and continue cooking for another 5 minutes. Place the cheese slices on the patties during the last 3 minutes of grilling. Place the buns, cut side down, on the outer edges of the rack to toast lightly during the last 2minutes of grilling.
To assemble the burger, place the burger on the bottom bun. Slather the top of the bun with 3 tablespoons Creamy Bruschetta salsa. Add the bun top and serve.
Makes 6 burgers.
