Ingredients

2 red peppers
1/4 cup roasted red pepper, chopped
1/4 cup mayonnaise
3 tablespoons crushed pineapple, in pineapple juice, undrained
1 tablespoon green onion, finely chopped
1 1/2 pound ground turkey, 93% lean
1/2 cup crushed pineapple, in pineapple juice, undrained
1/4 cup roasted red pepper, finely chopped
1/4 cup canned French fried onions, finely crushed
5 ounces shredded Monterey jack cheese
2 teaspoons soy sauce
1 teaspoon garlic salt
1/2 teaspoon ground ginger
1/4 teaspoon ground pepper
3 to 4 tablespoons olive oil for brushing burgers and grill rack
6 sweet Hawaiian type buns, split
6 (1/4 inch thick) large tomato slices
6 Bibb lettuce leaves

Roasted Red Pepper

Roasted Red Pepper Mayonnaise
1/4 cup roasted red pepper, chopped
1/4 cup mayonnaise
3 tablespoons crushed pineapple, in pineapple juice, undrained
1 tablespoon green onion, finely chopped

Patties
1 1/2 pound ground turkey, 93% lean
1/2 cup crushed pineapple, in pineapple juice, undrained
1/4 cup roasted red pepper, finely chopped
1/4 cup canned French fried onions, finely crushed
5 ounces shredded Monterey jack cheese
2 teaspoons soy sauce
1 teaspoon garlic salt
1/2 teaspoon ground ginger
1/4 teaspoon ground pepper

3 to 4 tablespoons olive oil for brushing burgers and grill rack
6 sweet Hawaiian type buns, split
6 (1/4 inch thick) large tomato slices
6 Bibb lettuce leaves

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.

To roast the red bell peppers, place them on the grill rack till the skin blackens and they are soft. When the peppers are cooked remove from the grill and place in a paper bag for 10 minutes. Peel the blacken skin off the peppers. Cut the peppers down the middle, lengthwise. Remove seeds. Remove stem. Finely chop and set aside.

To make roasted red pepper mayonnaise, in medium size bowl combine 1/4 cup chopped roasted red pepper, mayonnaise, 3 tablespoons crushed pineapple, and chopped green onion, mix well.

To make the patties, combine ground turkey, 1/2 cup crushed pineapple, 1/4 cup chopped roasted red pepper, crushed French fried onions, Monterey jack cheese, soy sauce, garlic salt, ginger, and pepper, mix well. Divide the mixture into 6 equal portions and form the portions into patties. Brush both sides of patties with olive oil.

Brush grill rack with olive oil. Place the patties on the rack, cover and cook 7 to 8 minutes per side, until burgers are no longer pink in center and thickest part registers 160 degrees. Place the buns, cut side down, on the outer edges of the rack to toast lightly during the last 2 minutes of grilling.

To assemble the burgers, spread an equal amount of the roasted red pepper mayonnaise over the cut side of the rolls. On each roll bottom place a patty, a tomato slice, and a lettuce leaf. Add the roll tops and serve.
