Confetti Turkey Burger

Confetti, the first word that popped in my head after mixing these burgers describes them to a tee. Red pepper, green onion and grated carrot speckled throughout the meat supply confetti color and enhance the turkey’s natural flavor. Easy to find ingredients and quick preparation methods make these festive burgers a family favorite.


1 cup herb flavor salad croutons
1 egg, slightly beaten
3 green onions, chopped
1 clove garlic, minced
1/3 cup diced red pepper
1/3 cup grated carrot
2 tablespoons milk
3/4 teaspoon salt
1/8 teaspoon black pepper
1 1/2 pounds ground turkey
Vegetable oil, for brushing the grill rack
6 Kaiser sandwich buns
1/4 cup mayonnaise
6 Romaine lettuce leaves
1 tomato, sliced


Crush or process salad croutons into fine crumbs. In large bowl combine crumbs with next 9 ingredients, handling the meat as little as possible to avoid compacting it; mix well. Divide the mixture into 6 equal portions, forming into patties to fit bun size. Loosely cover with plastic wrap and refrigerate.

Prepare a medium fire in a charcoal grill with a cover, or preheat a gas grill to medium. Brush the grill with vegetable oil. Place patties on grill, cover and grill for 5 minutes. Turn patties, and continue grilling for 4 minutes. During the last few minutes of grilling, place sandwich buns cut side down on the grill and toast lightly. To assemble burgers, spread each bun top and bottom with mayonnaise. Line bun bottoms with lettuce leaves, top with burgers then tomato slices and bun tops. Serve immediately.
