Chipotle Bacon BBQ Burger

Ingredients

Chipotle Bacon BBQ Sauce
1 cup bacon,(1) finely chopped
2 tablespoons fresh garlic, (2) chopped
1 1/4 cup white onion, (3) chopped
1/2 cup Whiskey (4)
3 cups ketchup (5)
1/4 cup chipotle peppers, (6)
chopped 1 teaspoon dry mustard (7)
1 teaspoon thyme (8)
1/4 cup molasses (9)
1 teaspoon coarse salt (10)
Patties 3 pounds ground beef,(11)
(preferbably 1/2 pound being ground chuck)
1 cup white onion, chopped
1 egg (12)
1/4 cup fresh cilantro, (13)
chopped 3 teaspoons coarse salt
Vegetable oil, for brushing on the grill rack
6 slices of pepper jack cheese (14)
6 Kaiser rolls, (15) Split
6 slices of white raw onion
18 slices of avacado (16)(about 3 avacados)

 

Instructions

Prepare a medium-hot fire in a charcoal grill with a cover. To make Chipotle Bacon BBQ Sauce, place a 10-inch nonstick, fire-proof skillet, in the middle of grill rack, when grill is hot. Add bacon to skillet, cook for about 4 minutes. Add garlic and onions, stirring occasionally until onions caramelize. Stir in whiskey and let simmer, occasionally scraping skillet with wooden spoon to incorporate all the flavors. Once most of the liquid has evaporated, add ketchup and stir. Move skillet to side of grill rack for lower heat. Stir in chipotle peppers, dry mustard, thyme, molasses and salt. Keeping skillet on the outer edge of grill rack to keep Chipotle BBQ Sauce warm. To make patties, combine beef/chuck, onion, egg, cilantro and salt in a large bowl, mix well, handling the meat as little as possible to avoid compacting it. Divide mixture into 6 equal portions and form portions into patties to fit the rolls. Brush hot grill rack with vegetable oil. Place patties on rack, turning once, until done to preference, about 5 to 7 minutes on each side for medium. During last few minutes of grilling, top each patty with the Chipotle Bacon BBQ Sauce, and add a slice of cheese on top of Chipotle BBQ Sauce. At this time, place rolls, cut side down, on the outer edges of the grill rack to toast lightly. Cover grill with lid and cook approximately 1-2 more minutes. To assemble the burgers, place patties on roll bottoms, top patties with an additional generous amount of the Chipotle Bacon BBQ Sauce, add 1 slice of onion and 3 slices of avacado. Add roll tops and serve! Makes 6 burgers
