Chicken Caper Burgers

I came up with the recipe for my chicken caper burgers when I was trying to find a healthy and interesting alternative to the usual cheeseburger. I combined flavors that I believed would compliment the chicken as well as please the pallet. To my surprise, the burgers have become extremely popular with both family and friends and I have often been asked for the recipe. With their encouragement, I am entering this contest to share my love of cooking with a wider audience. I hope you enjoy them as much as we have. Regards, Patti


6 TBS Mayonaise
3 TSP  Dijon Mustard
1/4 cup extra virgin olive oil
1 TSP minced garlic
1/2 cup thinly sliced scallons
3 TBS chopped Italian parsley
1/4 cup minced brined capers
1 1/2 lbs ground chicken 
6 slices swiss cheese
Vegetable oil for brushing on grill
1 kosher dill pickle very thinly sliced
6 Kaiser rolls
Small head Romaine lettuce


Pre heat gas grill covered on Med/High Prepare in a small bowl dijon mayo by combining mustard and mayo until smooth. To make burgers combine in a large bowl olive oil, garlic minced on a microplaner, scallons, parsley and capers. Add ground chicken and mix well to evenly distribute ingredients through the meat. Next add bread crumbs, mix well then divide into 6 equal portions and form into burgers. When grill is ready, brush rack with vegetable oil and place burgers on and cook for 4 min covered on first side. Next, flip burgers and cook 2 minutes covered. Remove cover cook additional 5 minutes adding cheese for last 2 minutes to melt. Remove burgers and lightly toast cut side of rolls. To assemble add burgers to bottom of rolls. Then, place 2-3 slices of pickle onto burger followed by lettuce leaves. Equally distribute dijon mayo sauce on roll tops and cover burgers... serve and enjoy!
