Chatpata Burger with Mint-Cilantro Chutney

Ingredients

Mint-Cilantro Chutney
1 ½ cups sour cream
½ cup fresh mint, finely chopped
4 teaspoons cilantro, finely chopped
1 teaspoon garam masala*
1 teaspoon green chilies, finely chopped
½ teaspoon sea salt
½ teaspoon freshly ground black pepper
Burger 1
½ pounds ground chuck (with 20% fat)
3 tablespoons garam masala*
2 teaspoons sea salt
½ teaspoon freshly ground black pepper
¾ cup cilantro, finely chopped
3 tablespoons fresh mint, finely chopped
3 tablespoons red onion, finely chopped
3 tablespoons ginger, finely chopped
3 tablespoons fresh garlic, finely chopped
¾ cup fresh bread crumbs
3 teaspoons ground almonds
3 teaspoons sour cream
3 teaspoons green chilies, finely chopped
1 ½ teaspoons ground green cardamoms (seeds only)*
1 tablespoon freshly squeezed lime juice
Vegetable oil for brushing the grill rack
1 ½ cups sliced red onion
2 tablespoons cilantro, finely chopped
½ teaspoon sea salt
1 tablespoon freshly squeezed lime juice
6 Sesame buns split * Found at your local Indian or Asian Grocer

 

Instructions

Prepare a medium hot fire in a charcoal grill with cover or preheat a gas grill to medium high. For chutney, combine sour cream, mint, cilantro, garam masala, chilies, salt and pepper. Cover and refrigerate until needed. To make the burgers, combine ground chuck, garam masala, salt, pepper, cilantro, mint, onion, ginger, garlic, bread crumbs, almonds, sour cream, green chilies, cardamoms and lime juice in a large bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the meat mixture into 6 equal portions and form into patties to fit the buns. When the grill is ready brush the rack with vegetable oil. Place the patties on the rack, cover and cook turning once until done to preference, 5 to 6 minutes on each side for medium. Mix onions, cilantro, salt and lime juice and keep aside. During the last few minutes of cooking, place the buns, cut side down on the outer edges of the rack to toast lightly. To assemble the burgers, on each bun bottom spread generous amount of chutney and top it with burger. Add onion slices on top of it and cover it with bun top and serve. Makes 6 burgers.
