Carne Adovada Burgers with Guacamole Aioli

Ingredients

Guacamole Aioli:
1 large ripe Haas avocado, peeled, pitted, and mashed
1 cup mayonnaise
1 tablespoon lime juice
1 tablespoon minced fresh garlic
1 teaspoon ground coriander
1 tablespoon chopped green chilies, drained
1 tablespoon fresh cilantro leaves

Salsa Fresca:
1-1/2 cups Roma tomatoes, coarsely chopped
1/2 cup purple onion, coarsely chopped
1/4 cup yellow bell pepper, coarsely chopped
2 tablespoons chopped green chilies, drained
4 cloves garlic, finely minced
1/4 cup fresh cilantro leaves, loosely packed
3 tablespoons freshly squeezed lime juice
1/4 cup light olive oil
1 tablespoon red wine vinegar
salt to taste

Adovada Patties:
2 pound freshly ground beef chuck
1/4 cup ground New Mexico red chili
1/4 cup red onion, finely chopped
1 tablespoon minced fresh garlic
2 teaspoons ground coriander
2 tablespoons dried Mexican oregano
1 tablespoon dark brown sugar
1 tablespoon tarragon vinegar
salt and pepper to taste
1/4 cup jalapeno jelly, melted

6 large round Kaiser rolls, split
1 medium cucumber, thinly sliced unpeeled
1/2 cup tortilla corn chips, coarsely crushed

 

Instructions

Whisk together aioli ingredients until thoroughly blended. Set aside, covered and chilled.
Stir together all salsa ingredients. Set aside, covered and chilled.
Prepare grill over medium-high fire. Mix patties ingredients together, except for jelly. Shape into 6 bun-size patties. Lightly coat grill rack with cooking spray. Cook patties on grill, covered, for 6-8 minutes, turning once, to desired doneness. Brush patties on both sides with melted jelly, leaving them on the grill.
Lightly toast cut side of rolls on grill. Spread aioli generously on cut sides of rolls. Arrange cucumber slices on bottom halves of rolls and place patties on top of the cucumbers. With a slotted spoon, mound salsa on top of patties. Sprinkle corns chips on top of salsa and cover to top halves of rolls.
