Caprese Burger with crisp prosuitto on grilled foccacia

Ingredients

1/2 cup + 4 tsp chopped fresh basil
1/4 cup + 2 tsp extra virgin olive oil
1/8 cup red wine vinegar
1 TBS diced shallots
3 tsp salt 2 tsp dijon mustard
1 TBS + 1 tsp chopped garlic
2 beefsteak tomates sliced thin
1/2 lb. fresh mozzarella
1 lb. prossiutto
3 lbs. ground beef
3 TBS wostershire sauce
6 TBS butter
2 loaves flavored foccaccia bread
1 package arugula
1/2 cup mayonaise

 

Instructions

In a small bowl wisk 1/4 cup basil, oil, redwine vinegar, shallots, mustard, 1 TBS garlic and 1 tsp salt. Add tomato slices to dressing mixture, cover and Refridgerate for at least 2 hours. In a food processor put remaining garlic, basil, oil and mozzarella blend until smooth. Transfer chesse mixture to bowl. cover and refridgerate until firm. Heat frying pan on high. Fry prossiutto until slightly crispy. Heat grill on med high In a large bowl mix ground beef, wostershire sauce and remaining salt. Blend well Divide beef into 8 equal size piles and roll each into a ball Press each ball flat and form a half dollar size well into each patty Take firm cheese mixtureand form 8 TBS size balls and press into well of each patty Wrap patty aroung cheese mixture making sre its sealed well so no cheese leaks out the sides while grilling Place patties on preheated grill with oiled grates amd cover. Grill approximately 4 to 5 minuted on each side Remove from heat Slice foccacia bread into quarters and butter Place buttered bread on grill and toast Remove from heat To serve take foccacia quarter,slice and spread mayo on each side. Layer and arugula lay burger on arugula and prosiutto and top with marinated tomatoes. Slice down the middle and enjoy!
