Cajun Turkey Burgers with Tarragon-Honey Dressing

Ingredients:

Tarragon-Honey Dressing

½ cup Dijon Mustard
¼ cup white or apple cider vinegar
½ cup extra virgin light olive oil
1-½ TBSP. chopped fresh Tarragon leaves
¼ cup honey
1-½ tsp. salt
1 tsp. freshly group pepper

Cajun Turkey Burgers

2 TBSP. extra virgin light olive oil
½ cup green pepper – seeded and finely chopped
½ cup tomato – seeded and finely chopped
2 tsp. garlic – grated or finely chopped
½ cup sweet onion – chopped
2 pounds ground chicken breast
1 tsp. salt
½ tsp. pepper
1 tsp. Worcestershire sauce
1 TBSP. Weber Grill Creations® N’Orlean Cajun™ seasoning
2 eggs
1 cup bread crumbs

Burger Toppings

8 slices cheddar cheese
8 thinly sliced red onion slices
8 thinly sliced tomato slices
8 thinly sliced green pepper rings
1 package arugula

Other

8 slices of crusty French or Italian loaf – halved
Extra virgin light olive oil for brushing on the grill rack

Prepare a gas or charcoal grill to medium-high.

Tarragon-Honey Dressing Preparation

Combine the Dijon mustard, vinegar, olive oil, tarragon, honey, salt and pepper in a mixing bowl or shaker. Whisk or shake the ingredients until thoroughly mixed. Set aside.

Cajun Burger Patty Preparation

Place a 10-inch nonstick, fire-proof skillet on the grill. Add 2 TBSP. olive oil, chopped green pepper, chopped tomato, garlic and onion. Cook for 10 minutes or until soft.

In a mixing bowl, add the ground chicken breast. Season the meat with salt and pepper. Add Worcestershire sauce, Weber Grill Creations® N’Orlean Cajun™ seasoning, eggs, bread crumbs and cooked vegetables. Separate into 8 equal patties. Cover and set aside.

Grill Cajun Burger Patties

Brush the grill rack with olive oil. Place the patties on the grill rack and cook thoroughly. Approximately 6 minutes on each side (160� F).

Create Burgers

Place a generous amount of Tarragon-Honey dressing on both halves of the Italian or French slice of bread. Place the Cajun Chicken patty on the bottom half of the bread. Place a slice of cheddar cheese, red onion, tomato and green pepper on top. Add 2 Arugula leaves on top. Add the top of the bread slice and serve.

Yield: Eight Cajun Chicken Burgers with Tarragon-Honey Dressing Burgers.
