Bruschetta Burger with Smoked Gouda

Ingredients

1 large Ugly tomato
6 cloves garlic, finely chopped
2 1/2 tsp fresh basil, finely chopped
2 1/4 tsp kosher salt
1 3/4 tsp ground pepper
1/3 cup extra virgin olive oil
1 1/2 tsp fresh oregano, finely chopped
1/2 cup Sutter Home Cabernet Sauvignon
1 1/2 lbs ground chuck
1 wide French bread
1/4 cup vegetable oil
6 slices smoked Gouda cheese

 

Instructions

Preparation: Bruschetta Dice the ugly tomato in small dices. Mix the tomato in a small bowl with 2 finely chopped garlic cloves, 1 tsp of the finely chopped basil, ¾ tsp of kosher salt and ½ tsp of pepper. Set this mixture aside. Preparation: Garlic/Olive Oil Poor the olive oil in a small cup. Add 2 finely chopped garlic gloves to the oil, stir lightly and set aside. Preparation: Hamburgers In a small bowl with a tight fitting lid add 2 finely chopped gloves of garlic, 1½ tsp basil, 1½ tsp kosher salt, 1¼ tsp pepper and 1½ tsp oregano with ½ cup Sutter Home Cabernet Sauvignon. Seal the lid and mix well. In a large bowl gently mix the seasoning mixture with the ground chuck. Divide the mixture into 6 even portions and make 6 flat hamburgers. Prior to grilling the burgers, slice the French bread diagonally into 12 thin, long slices. Brush each slice on one side with the garlic/olive oil. Preheat the grill to a medium heat, clean and oil the grate with the vegetable oil. Place the burgers on medium direct heat on the grill, place the bread slices on the grate with direct, low heat. Turn the bread slices frequently to avoid burning. Flip the hamburgers 3 times, each time after 2 minutes cooking. After the 3rd time add a slice of smoked Gouda to each hamburger. Cook the hamburgers medium-rare to medium. Plating: Place on each plate 2 slices of the toasted French bread with the oiled side up. Place the hamburger in the center of one slice, with the cheese on top. Dress with the bruschetta on each side of the meat patty and on top. Place the second slice on top of the hamburger with the oiled side down. Repeat with the other 5 hamburgers.
