Breakfast Ruben Burgers
It’s just like being at a real New York Jewish deli.
2 pounds-Corned beef, finely chopped
1-Potato, finely chopped
3 slices-Rye bread, shredded
1-Green bell pepper, finely chopped
1-Yellow onion, finely chopped
1.5 teaspoons-freshly ground black pepper
Colavita extra virgin olive oil, for brushing the grill rack
1 cup-Thousand Island dressing
12 slices-Swiss cheese
12 slices-Rye bread
Preheat a gas grill to medium-high. To make the patties, combine all of the ingredients in a large bowl. Mix well. Divide the mixture into 6 equal portions. Form the portions to be about the same diameter of the bread. Set aside. Brush the grill rack with Colavita extra virgin olive oil. Place the patties on the rack, cover, and cook about 3 minutes. Turn the patties. Layer each with Sauerkraut. Cover and cook for 4 minutes. Layer with Thousand Island dressing, 1 slice of Swiss cheese and Rye bread. Flip bread side down on outer edge of grill to toast bread evenly and melt cheese. cook for 1 minute. Top with Thousand Island dressing, Swiss cheese and Rye bread. . Flip bread side down on outer edge of grill to toast bread evenly and melt cheese. cook for 1 minute and serve hot. Serves 6
